Julie Belcik's TUNNEL OF FUDGE BUNDT CAKE

1 3/4  cups of butter or margarine softened

1 3/4 cups of granulated sugar

6 eggs

2 cups of powdered sugar

2 1/4 cups of flour

3/4 cup of cocoa

2 cups of chopped walnuts

GLAZE

3/4 cups of powdered sugar

1/4 cups of cocoa

1 1/2 to 2 cups of milk

 

Heat oven to 350 degrees.  Grease and flour bundt pan.  In large bowl beat margarine and granulated sugar until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Gradually add powdered sugar; blend well.  By hand, stir in remaining cake ingredients until well blended.  Spoon batter into prepared pan; spread evenly.  Bake for 58-62 minutes.  Cool upright on cooling rack 1 hour, invert onto serving plate.  Cool completely.  In small bowl combine galze ingredients until well blended.  Spoon over top of cake allowing some to run down sides.  Store lightly covered.  Serves 16

TIPS:  Nuts are essential for the success of the recipe. 

Since this cake has a soft tunnel of fudge, ordinary test for doneness cannot be used.

Darline Freeman's TURKEY POT PIE

1 tbs. butter

1 small onion chopped

1/2 cup carrots, peeled & chopped

1/2 cup potatoes, peeled & chopped

1/2 cup celery, chopped

1/2 tsp salt

1/2 tsp dried thyme

1/2 tsp crushed rosemary

pinch black pepper

1 bay leaf

2 cups chicken broth

1/3 cup of flour

1 can cream of chicken soup

1 cup frozen peas

2 cups cooked turkey, chopped

2  9" pie crusts

2 tbs milk

PIE CRUST

2 sticks butter

8 oz. pkg cream cheese

2 cups flour

 

In a saucepan, melt butter over medium heat.  Add onion, carrots, potatoes, and celery.  cook until softened (about 7 minut4es).  Add seasonings, herbs and 1 1/2 cups stock.  Cook 8 - 1- minutes.  Blend flour into remaining stock, stir into hot vegetable mixture.  Stir until thickened.  Add cream of chicken soup.  Remove bay leaf.  Stir in peas & turkey.  Spoon into 9 inch pie crust.  Fit second pie crust over the top and seal edges.  Cut vents in center for steam to escape.  Brush top pastry with milk.  Bake in preheated 400 degree oven for 10 minutes.  Reduce temperature to 350 degrees and bake 20 - 25 minutes or until pastry is golden brown and filling is bubbly.

PIE CRUST

Mix ingredients together and roll as you would regular pie crust.

1 1/2 lb. Italian sausage

1 onion chopped

Junior's Smokehouse Spicy Chili Mix

1 can Rotel tomatoes

2 cans ranch style beans (Optional)

 

Chili Mix

Juniors Smokehouse

Brown hamburger, sausage & onions.  Add Junior's Smokehouse Chili Mix,

tomatoes, beans and 2 cups of water.  Simmer 30 minutes

 

I had some at the Chili dance and it was delicious.  Of course a chocolate pie for dessert would be wonderful also.

Vondas' Mothers' HAWIIAN PIE

1 stick of margarine

2 cups of sugar

3 eggs

2 Tbsp cornmeal

1 small can of pineapple

1 can of coconut

1 unbaked pie shell

 

Mix all ingredients together.  Bake at 350 degrees for 1 hour

 

This is wonderful stuff...now lets talk presentation...put pie on large dish and surround it with Oreos

.
